What Am I Baking Today?

Today at Kingdom Bread Company, it’s all about one of my favorite bakes: mini sourdough loaves.

There’s something especially satisfying about taking a full-size sourdough recipe and turning it into these smaller, individual loaves. They still have everything I love about sourdough — a crisp crust, beautiful scoring, great oven spring, and that soft, airy interior — just in a smaller package.

Mini loaves are also a lot of fun because every loaf gets its own personality. Some score a little differently, some open up more dramatically in the oven, and every one feels like its own little handmade loaf.

Why Mini Sourdough?

Besides looking great, mini sourdough loaves are incredibly practical.

They’re perfect for:

  • A smaller household that may not need a full loaf

  • Sharing with friends, family, or coworkers

  • Pairing with soups, pasta, or dinner

  • Charcuterie boards and gatherings

  • Trying different sourdough flavors without committing to a large loaf

And, of course, they make a pretty great gift.

The Process

The process starts the same way as any good sourdough loaf: flour, water, sourdough starter, and salt.

After mixing, the dough goes through bulk fermentation while the starter does what it does best — slowly developing flavor and structure.

Once the dough is ready, I divide it into smaller portions, gently shape each loaf, and let them rest before their final shaping.

Then they head into the refrigerator for a cold ferment. This gives the dough even more flavor and makes the loaves easier to score before baking.

My Favorite Part: Scoring

This might be one of the best parts of the entire process.

Each cold mini loaf gets scored right before it goes into the oven. Even a simple score can completely transform once the dough hits the heat.

That first few minutes of baking is where the magic happens. The loaf expands, the score opens, and the crust starts developing.

There’s nothing quite like taking the lid off the Dutch oven and seeing how the loaf turned out.

Small Loaf. Big Sourdough Flavor.

The finished mini loaves may be smaller, but they still deliver everything you want from artisan sourdough.

A crunchy, deeply baked crust.

A soft interior.

A little tang from the natural fermentation.

And that unmistakable smell of freshly baked bread filling the kitchen.

That’s what I’m baking today.
